Wednesday What???

What you say? Its Wednesday? Oh crap, i have no What I Ate Post for you today, seeing as I still feel like CRUD and I kind of forgot what Wednesday was, oops!  I was going to do Wordless Wednesday that i see on some blogs but as you can read, i've already blown that one (insert eye rolling here)


So to make ammends i have 2, count them 2 recipe posts for you today (secretly i have 3 but then that would ruin Thirsty Thursdays post now wouldn't it - i looked ahead, didn't want to screw up any more of my first week with an actual plan) Oh BIG sigh - i am forgetful AND dramatic!

So what can i say about recipe #1 other then I wish i had used chicken, lol!  I was not super keen on the organic refried beans but it could be because i'm sick and whiny and a big baby who decides after 1 hour of cooking dinner i just don't want it anymore, but you might not be a big sick whiny baby and you will really enjoy my dinner because seriously there are leftovers in my fridge! 

Bean Burritos with Mexican Rice

Ingredients
  • Wholewheat wraps (preferable not circa november '10 shhh don't tell BF)
  • Taco seasoning (preferable organic, i buy mine at zehrs, i really want to learn to make my own soon though, maybe in an ACTUAL What I Ate Wednesday Post teehee)
  • Refried beans (or chicken, chicken would be GOOD)
  • Spinach (its kind of a given right? Donna has a new recipe get out the spinach)
  • Brown rice
  • Tomatoes
  • Corn (left over in the fridge but not circa november phew!)
  • Salsa
  • Cheddar
Directions
1. Mix half the pack of taco seasoning into a boiling pot of 2 cups of water, add 1 cup of brown rice, tomatoes and corn - cover until you can't hear the water sizzling (about half an hour)


2. Mix the other half of taco seasoning into the refried beans, smear into the middle of the wraps


3. Maybe throw some avacodo on there, then scrape it off when its not bad lighting your avocado is actually brown and you are already taking a chance with the wholewheat wraps


4. Put wrapped wraps in glass tray and drizzle salsa on the top (realize you said wrapped wraps and it just doesn't make sense no matter how you try to reword it)



5. Sprinkle some cheddar on and put on a low rack under the grill on low for ten minutes


6. Put spicy rice on the side, maybe make a flower out of spinach so your dinner looks nice and colourful


7. Serve it to BF and pretend it was delicious and you really ate the whole thing, using hand gestures helps you carry the small fib


Next i'm totally rocking the breakfast cookie with the addition of apples and decent pictures, (last breakfast cookie was courtesy of my iPhone, not the cookie just the pictures, wouldn't that be awesome if you could tell your iPhone you wanted a breakfast cookie - i bet there is an app for that, hahahahaa sickness makes me think i'm funnier then i am)

Ingredients 
  • 1 banana
  • 1 chopped apple (give some to the doodle, she likes apples)
  • 1/2 tsp of vanilla
  • 1 egg white  (1/8 cup liquid egg whites)
  • 1/2 tsp of cinnamon 
  • 1/4 tsp of baking powder
  • 1/3 cup of oats
  • 1/2 tbsp of ground flax (optional)
  • 1/2 tsp of chia seeds (optional)
  • Toppings - today is brought to you by the fruit: apple, the nut butter: almond and the syrup: agave


Directions


1. Mix banana, egg white and vanilla together in a microwave safe bowl
2. Add oats, ground flax, chia seeds, cinnamon, raisins and baking powder and mix
3. Microwave on high for 1 minute 45 seconds
4. Pull out of the microwave with a tea towel
5. Top with above toppings (duh)
7. Enjoy!!!




Okay friends, I have the day off today seeing as i have to work Sunday, yup so much for "bankers hours" my branch is now open on Sunday but i am definitely grateful to have a day off with BF in the middle of the week, we are looking at a house similar to the one we want to build and organizing the basement - i'm trying to sound excited about the basement but i don't think its coming across in this post... probably because its not going to be pretty, there will fights over whether or not i need 3 rolling pins, whether its acceptable for a 30 year old guy to still have his toy plastic dinosaurs and where that elusive navy blue Nine West high heel i lost when i moved in last year might be lurking...  I feel the need to start humming Jaws theme now?
